No, you are not wrong! If many television producers can make multiple seasons to their series, why couldn’t I make a few episodes or seasons to my recipes? As I mentioned in the previous episode, I’ve decided to share my simply Homemade Alternatives to Store-bought products with you all, and today on the list is homemade marshmallow fluff. Have you ever had a homemade marshmallow? Well, you should, and as soon as you can.

Homemade versus store bought marshmallows are like homemade vs. store cookies. Or homemade vs. store caramels…. Or muffins. You get the idea. Homemade marshmallows are smooth, glossy, creamy, fluffy, and taste like food, not chemicals. And since marscmallow creme doesn’t have to set like marscmallows do, you can be spooning this stuff into your mouth straight away – sorry…typo, using it in a recipe.


  Homemade Marshmallow Fluff Recipe

2 large egg whites
1/2 cup light corn syrup
1/4 cup water
2/3 cup plus 2 tablespoons sugar
1 1/2 tsp vanilla extract




storyline :

1. Beat egg whites together until light and frothy using an electric stand mixer with the whisk attachment. With the mixer running, slowly pour in 2 tablespoons sugar; beat until soft peaks form. Set aside.

2. Combine sugar, corn syrup and water in a small saucepan over medium-high heat. Boil together until a mixture reaches the firm-ball stage and candy thermometer reads 240°, about 6 minutes. Immediately remove from heat.

3. Turn mixer onto low and drizzle the syrup along the side of the bowl slowly combining it into the egg whites. When all the syrup has been added turn mixer up to medium high and beat for 7 minutes until thick and glossy. When there is about one minute left add in the vanilla.

4. Allow to cool, spoon and store in tightly sealed jars in the refrigerator up to a month.

  1. I just made this. My kids won’t leave it alone! Love love love the tase. However, I had a lot of left over “hard candy@” residue (probably like a 1/4 of the bath) left over after I got all the fluff out. Also, it’s very very thick, maybe because a quarter of my water/sugar/syrup mix was stuck to the sides and bottom of my mixer? Lastly, I couldn’t get it to stick to bread so my kids are eating it by the spoonful 🙂

  2. Some recipes I’ve seen call for cream of tartar but yours doesn’t. Have you tried the fluff with it? If so, does it make a difference? Also, about how much fluff does your recipe make? Some recipes make too much for me to use within in mentioned shelf life time.

    1. Hi Dianna, I can’t help you with that , I’ve never try it with cream of tartar, but I think that you could get much better white frosting. It yields about 3 cups. Let me know if you try,enjoy!

      1. Here we are, 2 1/2 years later. I have been making the fluff ever since. My grandkids love it as much as I do. I tried making half and it worked pretty good. Thank you for the obvious “keeper” recipe. Oh, I never tried the cream of tartar. Why fix what isn’t broken? 😀

    Combine in double boiler
    1 cup corn syrup
    4 Tbl white granulated sugar
    2 egg whites
    1 tsp vanilla

    Beat over boiling water at high speed until stiff peaks form. My grand kids love over ice cream and in hot chocolate and just plain.

  5. Hi, I’ve been making something similar for years. I use
    8ozs. Marshmellow fuff
    8ozs. Cream Cheese
    1/2 tsp. vanilla
    1/2 tsp. sugar
    Blend cream cheese, sugar vanilla till smooth. Add in the marshmellow fuff, mix together. Refrigerate, if you have any leftover!

    We dip fruit in. We like apples, strawberries to dip in it.
