What to make tonight for dinner?
Naturally I pulled up Google search and went recipe surfing. Google’s End list includes some eyebrow-raisers. Five out of 10 recipes are casseroles. Two are popular Thanksgiving recipes, other are easy recipes you likely make at every party, family get-togethers, or dinner in a hurry. Which tells me that sometimes you just need an EASY CASSEROLE to feed the troops and call it good.

Nothing could be easier than this casserole, all you need are 6 simple pantry (and inexpensive) ingredients and then you just let this yummy little guy bake in the oven while you get the table set, things cleaned up and you are ready to go. It’s also a great way to use up any leftover chicken or turkey!

First preheat your oven, then grab a baking dish. Any ol’ 9×9 dish will do.  Spray your baking dish with cooking spray then lay the cubed chicken breast down flat on the bottom of the dish. Pour soup mixture (chicken or mushroom) over cubed chicken breasts.  I find that I like mushroom more because during baking it runs off a bit as the juices come out of the chicken. Next layer on the ritz crackers. Though ritz crackers are the perfect crispy, crunchy topping for this dish, you can also use other kinds of crackers—feel free to experiment with what you have on hand in your pantry, but always be sure to mix the crackers with 1/4-1/2 cup butter to keep them moist. Sprinkle the top with the poppy seeds. You can skip this because many folks don’t have poppy seeds on hand. Cover and bake for 30 minutes, until crumbs are golden brown and casserole is hot and the sauce is bubbly (or freeze for baking at another time).

Now I know that casseroles aren’t fancy but this casserole has many possibilities.
Add some thawed or fresh broccoli florets or peas (or any veggie) to the mix and you’ve got a complete meal in one dish.

Ingredients

  • 4 chicken breasts, cooked and cubed (or shredded)
  • 1 cup sour cream
  • 1 (10.75 oz) can cream of chicken soup or mushroom soup
  • 25 Ritz crackers, crushed
  • 1/2 cup butter, melted
  • 2 Tbs poppy seeds

Instructions

  1. Preheat oven to 350F degrees. Spray a 9×9 square baking dish with no-stick cooking spray.
  2. Place cubed chicken in a prepared baking dish.
  3. In a medium bowl, stir together the soup and the sour cream until well blended, and pour over the chicken.
  4. In a separate bowl, stir together the crushed crackers and melted butter. Pour over the soup mixture layer. Top with poppy seed.
  5. Cover and bake for 30 minutes, until crumbs are golden brown and casserole is hot and the sauce is bubbly (or freeze for baking at another time).
  6. Serve plain or over rice.

  2. A delicious recipe my daughters are thrilled with. Have made it weekly. This time I will make a corner of it for me without cracker crumbs as I am keto. Can’t watch them eat alone another time.
