You all aren’t sick of pasta or dinners by now, are ya? Good, because last week when I went to the grocery store, I noticed that pasta was on sale.
Loooook out, world…..I made a pure comfort food…I made a casserole.
There’s nothing more comforting than casserole – ( maybe twice baked potatoes…. Y’all pretty much know by now how I feel about potatoes, but for those who don’t , i can’t imagine my way to the local grocery store or farmers market without picking up a big bag of potatoes ) unless you turn twice baked potatoes into a casserole! Just imagine them being crisp, greasy, cheesy, and bacony. Mmmm… I might be out of control.
Since we are huge fans of “potatoes” in general, making crushed New Potatoes seemed like a natural choice. These are so good because you get a soft creamy center like
mashed potatoes, but a crunchy crisp outside like roasted potatoes – delicious! One thing more they’re so simple, it’s almost terrifying, but they do take about half an hour – so plan accordingly.
