I have a little confession to make….. I got kinda hooked on these this weekend. These are so easy to make, just slice them into sticks, bread and bake. Crispy, tender, salty and flavorful they taste just like fried zucchini, only so much healthier.
Fancy-looking and festive, these crispy spears will make a veggie lover out of anyone. Even someone who avoids vegetables will like asparagus if it is wrapped in phyllo pastry dough, this flaky pastry is a wonderful thing, it makes the asparagus easy to pick up and eat with your fingers. If you’re not familiar, it’s basically paper thin sheets of unleavened flour dough. A bit time consuming, but it’s worth it in the end.
Since we are huge fans of “potatoes” in general, making crushed New Potatoes seemed like a natural choice. These are so good because you get a soft creamy center like
mashed potatoes, but a crunchy crisp outside like roasted potatoes – delicious! One thing more they’re so simple, it’s almost terrifying, but they do take about half an hour – so plan accordingly.
I know that the Summer actually begins the end of June, but once the calendar flips to June, I really want to celebrate the season. So. let’s celebrate the arrival of Summer with some sunshine! Chances are, if you’re invited to a party this summer, the host is taking care of the hot dogs, hamburgers or grilled chicken, and has asked guests to bring a side. People often say they can’t live without meat. I don’t think they mean it literally. I think they mean “I think it would be very difficult to live without meat.”, but sometimes it’s just cheaper to have a meal without meat. So if you dress up your veggies, and serve them up like these Zucchini Parmesan Bites, you won’t miss the meat. I promise.
