Warmer weather = craving salad for dinner! Avocado Salad with Tomato, Cucumber and Mozzarella served with some crunchy french bread and you’ve got a cool, easy dinner for a hot day.
The weather is warming up nicely and we finally have some consistent warm temperatures here ! It was mid 70’s over the weekend and 80’s yesterday! It is absolutely amazing!
I feel like we skipped over spring and jumped straight into summer! Don’t get me wrong, I’m not complaining, because the warmth and sunshine makes me feel so happy, energize and very productive! So, Today I’m sharing a easy springy/summerly cool and refreshing salad recipe.

No matter what year, what season, or where I am, one of my favourite veggies is avocado, followed by cheese in any form and tomato. There are almost always a few in my fridge, at various stages of ripeness. So versatile. The little black dress of vegetables, no doubt.
So if you Loooove Avocados, like mozzarella and tomatoes too only thing left is to slice some cucumbers and bake some crunchy french bread and you’ve got a cool, easy dinner for a hot day. It’s superrrr easy to make- the only recipes worth making, right?!
Ingredients
- 1 1/2 cups of chopped tomatoes
- 1 avocado - diced
- 1 cucumber - peeled and seeded then diced
- 1 carton fresh mozzarella cheese pearls, drained
- 1 tbsp olive oil
- 1 tsp lemon juice
- kosher salt and freshly ground black pepper
- fresh parsley, chopped
Instructions
- Cut tomatoes in a half(if you are using small tomatoes or cherry tomatoes)otherwise cut into a medium dice.
- Peel and seed one cucumber and dice.
- Assemble diced avocado and mozzarella cheese in a bowl.
- Whisk together olive oil, fresh parsley and lemon juice - pour over salad.
- Dust lightly with kosher salt and black pepper.
- Toss to coat and serve.
This is simply perfect for a picnic!
