I have already convinced myself many times that my Buffalo Chicken Tortilla Roll Ups never fail – there isn’t a person who doesn’t like them. Recently I have started to believe that I have real friends again – my girls’ team. Don’t look at me so strange or have a bad opinion about me.
“Doesn’t every woman have her girlfriends?” you would think.
Probably every woman has them, but I haven’t had them for a long time. Many times (even too many) I was disappointed in people I used to believe in at some point. Most of all because I have pretty high expectations from those I will consider my friends. And I don’t have the habit of drinking coffees at popular spots, neither a conversation doesn’t go beyond fashion or kids.
It is true that David is now the center of my world…but in those moments I enjoy some different topics. I am still afraid to trust and open up completely. And I can no longer afford to be disappointed.
But the girls are aware of my high standards and it seems to me that they understand me. I hope they are…

Easy Spinach Dip Cheese Sticks, a perfect party appetizer no matter the occasion.
Ingredients
- 1/2 cup frozen chopped spinach, thawed
- 1/2 cup parmesan cheese, grated
- 8 oz cream cheese, softened
- 1 1/2 cups mozzarella cheese, shredded
- 1 tsp garlic powder
- Salt & Pepper, to taste
- 1 cup All-purpose Flour
- 4 eggs, beaten
- 6 Tablespoons Milk
- 2 cups Italian style breadcrumbs or Panko breadcrumbs
- Canola oil, for frying
- Marinara Sauce, for dipping
- chopped parsley for garnish
Instructions
- In a medium bowl, combine the cream cheese, spinach, mozzarella, parmesan, garlic powder, salt and pepper, stirring until thoroughly mixed.
- Transfer the mixture to a square baking pan lined with aluminum foil and spray with cooking spray.
- Spread the mixture evenly in thick layer and freeze for 30 minutes.
- In the meantime, whisk eggs and milk together.
- Place the flour, egg mixture, and breadcrumbs into three separate bowls.
- Once the dip is completely frozen, remove the block of dip from the tin foil and cut into 1/2 inch strips, then slice the strips in half into sticks. Keep them frozen as you bread them.
- Dip the spinach dip cheese sticks into the flour, then the eggs, then the breadcrumbs, then back into the eggs, and finally back into the breadcrumbs.
- Set the breaded sticks aside on a plate.
- Heat oil in skillet and cook sticks for about 30 seconds to a minute on each side, or until golden brown and crispy on the outside, but making sure the dip has melted on the inside.
- Drain on paper towels.
- Garnish with chopped parsley and serve with marinara sauce for dipping.
