Pasta with Fresh Tomato Sauce

This is an extremely simple pasta recipe that I love to make when I don't really feel like cooking !

Ingredients

  • 12 ounces spaghetti
  • 1 1/2 lbs plum tomatoes
  • 1/8 cup fresh basil leaves
  • 2/3 tbsp flat leaf parsley
  • 2/3 tbsp chopped garlic from 2 garlic cloves, plus more if desired
  • 1/8 cup extra-virgin olive oil
  • freshly ground pepper
  • coarse salt
  • 1/4 cup grated Parmesan 1 ounce (for serving)

Instructions

  • Coarsely chop the tomato and transfer to a small bowl.
  • Finely chop basil, parsley, and garlic, and mix together with oil and tomato chunks in a another bowl (or pulse ingredients, including tomato chunks and oil, in a food processor to blend).
  • Bring a large pot of salted water to a boil.
  • Add pasta, and cook until al dente.
  • Drain pasta well in a colander, and then place the pasta to the serving bowl.
  • Pour the fresh tomato mixture over the pasta in a serving bowl, sprinkle salt and pepper and toss to mix.
  • Drizzle with oil.
  • Sprinkle with the Parmesan just before serving.
