Easy Apple Cobbler
This Easy Apple Cobbler is one of my FAVORITE fall desserts. It’s made with fresh apples or canned apple pie filling, and a few basic pantry ingredients.
- 1 cup granulated sugar
- 1 cup flour
- 1 cup milk
- 1 tsp vanilla extract
- 1 tbsp baking powder
- 1/2 tsp salt
- 6 tbsp unsalted butter cubes
for the canned Apple Filling Option
- 1 can apple pie filling cherry, peach, blueberry
for the homemade Apple Filling Option
- 2 Tbsp butter
- 3-4 medium apples peeled, cored, and diced into chunks ¼ inch thick
- 1/3 cup brown sugar
- 3 Tbsp water
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 1 Tbsp + 1 teaspoon cornstarch
- 2 Tbsp water
Preheat oven to 350 degrees. Melt butter in a 9x13 (preferably glass) baking dish. Do this by placing it in the oven while it preheats.
Whisk together flour, sugar, baking powder, and salt. Pour in milk and vanilla and stir to combine.
Pour the batter mixture into the baking dish over the butter. Do not mix with butter. Spoon in apples or your fruit of choice in random spots.
Bake for 45 minutes. The crust will rise around apples.
Allow to cool for at least 15 minutes before serving. Serve warm with vanilla ice cream, if desired. Cover and store leftovers in the refrigerator for up to 4 days.
Homemade Apple Filling
In a medium size pan, melt butter, add apples, spices, brown sugar, and 3 Tablespoons of water. Cook over medium-high heat, for 4-6 minutes or until apples are very slightly softened.
In a small dish combine cornstarch and 2 Tablespoons water. Add to pan while stirring and continue to cook until apples are tender, and filling is thickened, about 4-5 minutes. Cool.
