Ingredients

oat crumble base and topping

  • ½ cup unsalted butter softened
  • ½ cup sugar
  • 1 ½ cups rolled oats
  • 1/2 cup all-purpose flour
  • ¼ tsp cinnamon
  • ¼ tsp salt

Peach Filling

  • 2 ¼ cups peaches peeled and cut into small pieces 4-6 peaches, depending on size
  • 2 tbsp sugar
  • ¼ tsp salt optional brings out the flavor more
  • 1 tbsp cornstarch
  • 1 tsp fresh lemon juice
  • 1 tsp almond extract

Instructions

  • Preheat oven to 350. Line an 8x8" square baking dish with parchment paper, leaving an overhang on both sides.
  • In a large mixing bowl, cream together softened butter and sugar. Stir in the oats, flour, cinnamon and salt to make a soft, crumbly mixture.
  • Scoop 1 ½ cups of the crumble into the prepared baking dish, and press down firmly into an even base.
  • Mix the peaches with lemon juice and almond extract.
  • Next, add in the cornstarch, sugar and salt (optional) and toss together.Spoon onto the prepared crust.
  • Sprinkle the reserved crumble onto the fruit. Bake in preheated oven for about 30 minutes, or until topping is golden brown.
  • Let cool in the pan for 30 minutes, then carefully lift out using the edges of the parchment and set onto a wire rack to cool completely before cutting into bars.

Notes

ICING RECIPE (optional)
  • 1 cup powdered sugar
  • ¼ tsp almond extract
  • 1 tbsp milk (more or less for desired consistency)
Whisk together the powdered sugar, almond extract, and milk. Drizzle on the bars just before serving.
  •  Keep bars in the fridge for extra 1,5 hours until it is completely cool so you can have nicely cut bars.
  •  Keep bars in an airtight container in the fridge for up to 4-5 days or in the freezer for up to 3 months.
