Peach Crumble Bars with Oats - Sweet juicy peaches topped with a buttery, cinnamon-y, crispy topping – a delicious taste of summer in convenient, shareable, handheld bar form. This simple, easy recipe can be adapted to any of your favorite fresh summer fruits!
2 ¼cupspeaches peeled and cut into small pieces4-6 peaches, depending on size
2tbspsugar
¼tspsalt optionalbrings out the flavor more
1tbspcornstarch
1tspfresh lemon juice
1tspalmond extract
Instructions
Preheat oven to 350. Line an 8x8" square baking dish with parchment paper, leaving an overhang on both sides.
In a large mixing bowl, cream together softened butter and sugar. Stir in the oats, flour, cinnamon and salt to make a soft, crumbly mixture.
Scoop 1 ½ cups of the crumble into the prepared baking dish, and press down firmly into an even base.
Mix the peaches with lemon juice and almond extract.
Next, add in the cornstarch, sugar and salt (optional) and toss together.Spoon onto the prepared crust.
Sprinkle the reserved crumble onto the fruit. Bake in preheated oven for about 30 minutes, or until topping is golden brown.
Let cool in the pan for 30 minutes, then carefully lift out using the edges of the parchment and set onto a wire rack to cool completely before cutting into bars.
Notes
ICING RECIPE (optional)
1 cup powdered sugar
¼ tsp almond extract
1 tbsp milk (more or less for desired consistency)
Whisk together the powdered sugar, almond extract, and milk. Drizzle on the bars just before serving.
Keep bars in the fridge for extra 1,5 hours until it is completely cool so you can have nicely cut bars.
Keep bars in an airtight container in the fridge for up to 4-5 days or in the freezer for up to 3 months.
