How To Make Peach Crumble Bars

There are two components to this recipe. The crust and crumble topping and the peach filling. Peach crumble bars go together in just a few steps.

  1. In a large mixing bowl, cream together softened butter and sugar.
  2. Stir in the oats, flour, cinnamon, and salt to make a soft, crumbly mixture.
  3. Scoop 1 ½ cups of the crumble into the prepared baking dish, and press down firmly into an even base.

  1. Mix the peaches with lemon juice and almond extract.
  2. Add in the cornstarch, sugar, and salt (optional) and toss together. Spoon onto the prepared crust.

  1.  Sprinkle the reserved crumble onto the fruit.
  2.  Bake in preheated oven for about 30 minutes, or until the topping is golden brown.

  • 8 x 8 inch baking dish
  • 9 x 9 inch baking dish

Ingredients
  

oat crumble base and topping

  • ½ cup unsalted butter softened
  • ½ cup sugar
  • 1 ½ cups rolled oats
  • 1/2 cup all-purpose flour
  • ¼ tsp cinnamon
  • ¼ tsp salt

Peach Filling

  • 2 ¼ cups peaches peeled and cut into small pieces 4-6 peaches, depending on size
  • 2 tbsp sugar
  • ¼ tsp salt optional brings out the flavor more
  • 1 tbsp cornstarch
  • 1 tsp fresh lemon juice
  • 1 tsp almond extract

Instructions
 

  • Preheat oven to 350. Line an 8x8" square baking dish with parchment paper, leaving an overhang on both sides.
  • In a large mixing bowl, cream together softened butter and sugar. Stir in the oats, flour, cinnamon and salt to make a soft, crumbly mixture.
  • Scoop 1 ½ cups of the crumble into the prepared baking dish, and press down firmly into an even base.
  • Mix the peaches with lemon juice and almond extract.
  • Next, add in the cornstarch, sugar and salt (optional) and toss together.Spoon onto the prepared crust.
  • Sprinkle the reserved crumble onto the fruit. Bake in preheated oven for about 30 minutes, or until topping is golden brown.
  • Let cool in the pan for 30 minutes, then carefully lift out using the edges of the parchment and set onto a wire rack to cool completely before cutting into bars.

Notes

ICING RECIPE (optional)
  • 1 cup powdered sugar
  • ¼ tsp almond extract
  • 1 tbsp milk (more or less for desired consistency)
Whisk together the powdered sugar, almond extract, and milk. Drizzle on the bars just before serving.
  •  Keep bars in the fridge for extra 1,5 hours until it is completely cool so you can have nicely cut bars.
  •  Keep bars in an airtight container in the fridge for up to 4-5 days or in the freezer for up to 3 months.
