Let’s talk birthday cake for a quick minute. Do you have the same cake every year, or do you switch it up? Well, this is the cake that conjures up childhood memories every time I make it, because my Mom made this cake on almost every special occasion including my birthday for nearly all of my childhood.
So I guess now I don’t have to tell ya how good great it is, because one thing every birthday cake should have in common is that it be super special.
1 egg
2 sticks butter (room temperature)
1 1/3 cup sugar, granulated
1 pkg 13.5 (oz) fine graham crackers crumbs
2 apples (finely mashed)
1 cup pecans Grind or process pecans till they’re very finely chopped (but not pasty).
1 cup sugar jelly cubes chopped
2 Bananas ripe, but no over ripe
for chocolate ganache
3.5 (oz) chocolate (chopped)
1/2 cup heavy whipping cream
Mix all the ingredients in one medium sized bowl.
Put the mixture on a baking paper covered bottom of an 9×13 baking dish, and press it until you get two 1/2 inch flat squares.
Peal of the bananas, put them in order and make a roll.
Make the chocolate ganache. Melt the chocolate and whisk in the heavy whipping cream until become silky.
Spread it over the cake, and store cake in a fridge.
