’Tis the season for pumpkins and scarecrows.
Yes, I know It isn’t officially fall yet, but I don’t care.
As the leaves on our street are definitely turning yellow, the temperatures are ACTUALLY dropping this weekend and you can taste a little warm, earthy notes pumpkin spice in the air, you’ll want to get in the fall spirit. Right ? And where better to do that than a pumpkin spiced kitchen.
When I think of a summer time, I think flip flops, t-shirts, and the beach! And when I think about summertime desserts, I think easy to make and some bright, summertime flavors. Easy to make desserts are nice year-round, of course, but in the summer I don’t want to leave the oven on for hours when I want the flat to stay cool.
I saw ideas for cauliflower tots that looked tasty from several other great food bloggers, some of them had an ingredient and/or method which I didn’t want to use, so I started experimenting to come up with my own version. I decided to make few tweaks, cooking the cauliflower in microwave before chopped it in the food processor, and drain the chopped cauliflower to keep the tots as crisp as i could get them. The mixture of the shredded cauliflower with some cornmeal gives it the perfect tot texture.
