We have an over abundance of cherry tomatoes in our garden. I’m not complaining. No way. I never plant this recipe but it turned so good and simple. I made this on Sunday and it didn’t last 24 hours in our house.
They were perfect last night, creamy and slightly caramelized, but I’d say they were equal or much better in the morning, because, I really, really enjoyed eating them for breakfast, very simply arranged on some toast, drizzled with a little olive oil and sprinkled with parsley.

Avocado, Corn & Cherry Tomato Salad
Hi, can You please stop for a minute and taste a Summer in a salad! Just like in true Summer style, the tomatoes and corn flavours are simple, fresh and totally delicious. And Avocados are delicious, buttery, fatty (in a healthy way!), pretty, and again, delicious. So, If you are already a avocado lover, I have no doubt that this variation of salad will hit the spot! I love this salad because it’s so fresh and easy to make – the only recipes worth making, right?!
