Broccoli Cheddar & Egg Hashbrowns Cups


Attention all savory “cupcake” lovers: I’ve got another great one for you.  Who needs a greasy sausage, egg & cheese sandwich from a fast food joint when you could grab one or two of these tasty cups instead? They’re more filling and for way less calories/fat/P+.

I love broccoli all year round, fresh onion, Cheddar & Eggs flavor combo just sounds absolutely perfect. These come together super quickly and are great for grab and go lunches, Summer potlucks or family dinners.broccoli-cheddar-egg-hashbrowns-cups

20 ounces Ore-Ida Shredded Hash Brown Potatoes, thawed
2 tablespoons olive oil
Salt and black pepper, to taste
1 yellow onion, chopped
1 cup broccoli florets, chopped
6 eggs
4 egg whites
1/4 cup shredded cheddar cheese
