Rice Krispies topped with gooey chewy caramel, melt-in-your-mouth chocolate, and crunchy pecans throughout. Something that every chocolate, caramel, and Krispies fan should taste.

These Caramel Turtle Rice Krispie Treats have become a new favorite Christmas recipe at our house. Try them and see for yourself how delicious they are!

This oh-so-simple goes from stovetop (or microwave) to satisfied tummies in a flash. You only need about 15 minutes, some marshmallows, butter and, of course, Rice Krispies (but I add a small splash of vanilla too). Best of all, no baking!

How to Make Caramel Turtle Rice Krispie Treats

This oh-so-simple goes from stovetop (or microwave) to satisfied tummies in a flash. You only need about 15-20 minutes, some marshmallows, butter, caramels, chocolate chips and, of course, Rice Krispies (but I add a small splash of vanilla too). Best of all, no baking!

Here’s all you do:

  1. Grease a 9×13 pan (or use a smaller pan if you want a thicker bar).
  2. Melt butter and marshmallows on the stove or in the microwave (per recipe below).
  3. Stir in a splash of vanilla. Add the Rice Krispies and stir gently to combine.
  4. Press gently into the greased pan and allow to cool.

Caramel layer
  1. In the top of a double boiler, melt caramels, along with heavy cream.
  2. It will take about 10 minutes to melt everything together. Stir as needed.
  3. Pour the melted caramel over the prepared Rice Krispies treats, reserving a small amount of caramel in the double boiler (that will be used on the very top as decoration).
Chocolate
  1. Melt chocolate chips and heavy cream in a bowl in the microwave (in 30-second intervals).
  2. When almost melted, remove (carefully) from the microwave, and stir until smooth and fully melted.
  3. Spread melted chocolate over evenly.
Topping
  1. Top with chopped pecans and chocolate chips .
  2. Warm the remaining caramel (that was reserved in the double boiler) and chocolate and then drizzle on top of pecans.

Equipment

  • 9 x 13 baking dish

Ingredients
  

  • 6 cups Rice Krispie Cereal
  • 1 14-16 oz. bag mini marshmallows reserve some for topping decoration
  • 6 Tablespoons butter
  • 1 teaspoon vanilla extract optional
  • 14 oz. caramels about 45 little caramel squares
  • 1/2 cup heavy cream or evaporated milk divided
  • 6 oz Chocolate chips plus more for topping decoration
  • 1 cup chopped pecans toasted for more flavor, optional

Instructions
 

  • Prepare a 9x13 pan by greasing it and/or lining it with parchment paper. Melt butter and mini marshmallows over medium low heat until smooth, stirring all of the time to prevent scorching.
  • Stir in Rice Krispies, press into a 9×13 pan (or slightly smaller if you prefer a thicker Rice Krispie).
  • Melt caramels, vanilla and 1/4 cups heavy cream over a double boiler, until smooth. It will take about 10 minutes, stir as needed. Pour over Rice Krispie Treats. Place the pan in the fridge for about 5 minutes.
  • Melt the chocolate chips and 1/4 cups of heavy cream in the microwave for about 1 minute. Spread over caramel.
  • Sprinkle chopped pecans, and additional chocolate chips over the chocolate layer and let it set in the fridge. Drizzle the remaining caramel and chocolate. Cut into squares and serve.
