How many baking days are there left before Christmas?
If you are still looking for good cookies to bake for a holiday platter, I urge you to give these almond cream cheese cookies a try.

It’s November, and I have Christmas cookies on my mind. Slice and bake cookies clearly fall within the Christmas-spirit camp. Especially since you can prepare this dough weeks in advance and slice and bake when you need them.  I mean, it’s too late for that now if you’re reading this the day the recipe goes live…but it’s never too early to plan ahead for next year. Not to mention, these would be great all year long.
I have to warn you, they could become your new favorite cookie.

What is a slice and bake cookie?

Slice and bake cookies are a type of cookie that is formed into a log that you can cut into individual rounds and place on the baking sheet, as opposed to “drop cookies” that are hand shaped and dropped into small mounds on the baking sheet before baking.

They’re slice and bake! There’s just something about taking a roll of cookie dough out of the fridge, knowing that all that’s left to do is slice and bake them.
They’re reminiscent of cheesecake. Yep, there’s cream cheese in the dough which makes for a little bit of richness and a lovely tender texture.
They’re rolled in slivered almonds that add a nice crunch to the overall soft and crumbly cookie. So cute!

HOW TO MAKE Almond Cream Cheese Cookies from scratch?

The cookies are easy to mix up using an electric mixer. As I mentioned above, they’re one bowl easy.  Once the dough comes together, it will be much too soft to form a log.
So, divide it in half, wrap each piece in plastic wrap and let it chill until it’s firmed up a bit. Then you form the dough into two logs, about 2 inches in diameter.
Q : I noticed when I lay cookie logs in the refrigerator to chill, they end up with the bottom side becoming flat.
A : Well, instead of allowing them to lie flat, you can try to set each roll up so that it is standing vertically in it’s own tall drinking glass. Now, the only part that gets flattened out in this scenario is the end that’s at the bottom of the glass.

Slice, Bake and Decorate The Almond Cream Cheese Cookies

Are you ready to make some more decisions?
When it comes to decorate these wonderful cookies, you have a couple of options.
Once you’ve formed your logs, just lay out some plastic wrap and roll each log in the slivered almonds until it is evenly coated. Lightly press the slivers to help them adhere. Wrap them up in the plastic wrap and send them to the refrigerator to chill for at least two hours.

Q : My family members don’t like almonds, can we use something else ?
A : Sure, you can use chopped walnuts/pecans instead or graham crackers crumbs, or even sprinkles….. Don’t you love sprinkle cookies? Sprinkles make everything better.

The possibilities are endless!

Once they’ve chilled, all you do is slice into 1/4 inch thick rounds and bake!

To Make Ahead:

Cookie logs can be made up to 2 weeks in advance.  Cookies can be baked 1 week ahead of time and stored in an airtight container at room temperature or frozen for up to 1 month.

Almond Cream Cheese Cookies

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 1 hour, 30 minutes

Yield: 30-36

Buttery melt-in-your-mouth sugar cookies with the tang of cream cheese and garnished with slivered almonds.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoons salt
  • 2 sticks unsalted butter, soften
  • 3 ounces cream cheese, room temperature
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 1 egg white
  • 1 cup almond slices, lightly toasted

Instructions

  1. Whisk together flour and salt in a large bowl, set aside.
  2. Beat butter and cream cheese in a large mixing bowl with an electric mixer on medium speed until pale and fluffy, about 2 minutes.
  3. Mix in sugar and vanilla. Reduce speed to low. Add flour mixture, and mix until just combined.
  4. Divide dough in half. Wrap each piece in plastic wrap and refrigerate for 30 minutes or until dough has firmed up enough to shape.
  5. Place the dough on top of the plastic wrap and cover with another piece of wrap the same size.
  6. Roll out the dough into a log about 2 inches in diameter. Freeze until firm, about 30 minutes or up to 2 weeks.
  7. Preheat oven to 350F. Unwrap one log, lightly brushed with egg white, and roll in almond slices, coating completely.
  8. Cut into 1/4 inch thick rounds. Space one inch apart on baking sheet lined with parchment paper.
  9. Bake cookies, rotating halfway through, until golden around edges, 12 to 15 minutes. Let cool on wire racks. Repeat with the remaining log.
