How To Make Peach Crumble Bars
There are two components to this recipe. The crust and crumble topping and the peach filling. Peach crumble bars go together in just a few steps.
- In a large mixing bowl, cream together softened butter and sugar.
- Stir in the oats, flour, cinnamon, and salt to make a soft, crumbly mixture.
- Scoop 1 ½ cups of the crumble into the prepared baking dish, and press down firmly into an even base.
- Mix the peaches with lemon juice and almond extract.
- Add in the cornstarch, sugar, and salt (optional) and toss together. Spoon onto the prepared crust.
- Sprinkle the reserved crumble onto the fruit.
- Bake in preheated oven for about 30 minutes, or until the topping is golden brown.

- 9 x 9 inch baking dish
Ingredients
oat crumble base and topping
- ½ cup unsalted butter softened
- ½ cup sugar
- 1 ½ cups rolled oats
- 1/2 cup all-purpose flour
- ¼ tsp cinnamon
- ¼ tsp salt
Peach Filling
- 2 ¼ cups peaches peeled and cut into small pieces 4-6 peaches, depending on size
- 2 tbsp sugar
- ¼ tsp salt optional brings out the flavor more
- 1 tbsp cornstarch
- 1 tsp fresh lemon juice
- 1 tsp almond extract
Instructions
- Preheat oven to 350. Line an 8x8" square baking dish with parchment paper, leaving an overhang on both sides.
- In a large mixing bowl, cream together softened butter and sugar. Stir in the oats, flour, cinnamon and salt to make a soft, crumbly mixture.
- Scoop 1 ½ cups of the crumble into the prepared baking dish, and press down firmly into an even base.
- Mix the peaches with lemon juice and almond extract.
- Next, add in the cornstarch, sugar and salt (optional) and toss together.Spoon onto the prepared crust.
- Sprinkle the reserved crumble onto the fruit. Bake in preheated oven for about 30 minutes, or until topping is golden brown.
- Let cool in the pan for 30 minutes, then carefully lift out using the edges of the parchment and set onto a wire rack to cool completely before cutting into bars.
Notes
ICING RECIPE (optional)
- 1 cup powdered sugar
- ¼ tsp almond extract
- 1 tbsp milk (more or less for desired consistency)
- Keep bars in the fridge for extra 1,5 hours until it is completely cool so you can have nicely cut bars.
- Keep bars in an airtight container in the fridge for up to 4-5 days or in the freezer for up to 3 months.
