A perfect side dish, fresh asparagus baked to perfection and topped with parmesan and garlic and made with just 5 min prep!
Lately I have been daydreaming of hot summer days, ocean breeze, enjoying the water and sun…and honestly anything related.
Imagine a balcony overlooking the ocean or an island with the sea breeze blowing past my face, and this plate in front of you….you don’t need anything more, except your soulmate….Okay, maybe a glass of wine….
But, let’s get back to reality, shall We?
I love going to farmers markets, there is always so much fun walking around, looking at all of the gorgeous fresh produce, chatting with the farmers and vendors, and sampling anything and everything offered.Since it’s one of my favorite Spring vegetable, specially when it’s baked to perfection and topped with parmesan and garlic and made with just 5 min prep, asparagus is first on my list of things to buy this weekend.
This is my favorite way to make it. Even thought it has very few ingredients, it is honestly so flavorful and I could easily eat a whole batch myself 🙂 And what is more, the family liked it too! I didn’t think I could get everyone to eat asparagus, but this is always a hit, and so easy (but no one has to know how easy it is!!!)
What is your favorite way to eat asparagus?
Ingredients
- 1 pounds asparagus spears
- 2 Tbsp olive oil
- 2 Tbsp powdered garlic
- salt and pepper, to taste
- Lemon juice (1 lemon)
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 400 degrees F
- Wash asparagus and cut the ends to make them look evenly.
- Spray the inside of a 9x13 baking dish with olive oil cooking spray.
- Place asparagus in the baking dish, lightly spray spears with cooking spray,
- sprinkle 1Tbsp powdered garlic, salt and pepper to taste and gently toss to combine.
- Bake in preheated oven until the asparagus are just lightly browned and tender in the center
- (fork easily punctures thickest part of stem), about 10-12 minutes
- Toss in the remain garlic, parmesan and lemon juice.
- Serve immediately.
