Simple Cherry BarsThe best cake in the world! Not saying that just because this Cherry Bars recipe was passed on to me from my mother, who was inspired by her own mother’s amazing traditional cookery.

No, No…. It is delicious and very good for you too, and also very easy to make. Even if it doesn’t look super pretty and very promising, it is very moist  and light, not too sweet, not too fruity. Just perfect, not only as a Sunday treat.

Simple-Cherry-Bars

1 lbs. pitted fresh cherries or frozen and thawed cherries
4 eggs
3 cups whole wheat flour
1 cup yogurt
2 cups sugar
1/2 cup of vegetable oil
2 tsp baking soda
2 tsp vanilla




Heat oven to 400°.
Using an electric mixer, beat eggs and sugar until light and fluffy, slowly add all the other ingredients except cherries, and continue with mixing until batter becomes smooth.
Scrape the batter evenly into a greased and floured 13 x 9 inch ( or covered with baking paper) baking pan and cover with cherries. Bake until cake is golden brown, 40–45 minutes. Let it cool for 30 minutes, then cut into 2 inch bars.
