Blueberry Streusel Muffins


Blueberry Streusel MuffinsGood morning! Anyone in the mood for a muffin this morning? I don’t know about you, but I am in the mood for a muffin just about every morning. And i guess that most of You would have thought about chocolate chip or cookie butter muffins, but for this morning i suggest you to
have blueberry muffins instead. This is a great muffin recipe to bookmark – it is so easy to throw together, and you can customize it with what you have on hand.

Blueberry Streusel Muffins

Adapted from Joy of Baking
3 large eggs
1 1/2 cup milk
1 teaspoon pure vanilla extract
3 cups all purpose flour
1 cup granulated white sugar
2 1/2 teaspoons baking powder
pinch of salt
1/8 teaspoon ground cinnamon (optional)
1/2 cup cold unsalted butter, cut into small chunks
2 cups (one dry pint) fresh or frozen blueberries (if using frozen blueberries, do not thaw)
1 teaspoon freshly grated lemon zest
2 tablespoons unsalted butter
