I saw ideas for cauliflower tots that looked tasty from several other great food bloggers, some of them had an ingredient and/or method which I didn’t want to use, so I started experimenting to come up with my own version. I decided to make few tweaks, cooking the cauliflower in microwave before chopped it in the food processor, and drain the chopped cauliflower to keep the tots as crisp as i could get them. The mixture of the shredded cauliflower with some cornmeal gives it the perfect tot texture.
They are baked, not fried, which keeps them lighter, and allows the edges to crisp up and get the cheese a little toasty. If you need a way to get your family to eat more vegetables, give these a try.
3 Cup fresh cauliflower florets (about 1 medium head)
1 large egg
1 Cup shredded cheese (your choice)
1/4 Cup cornmeal
1/2 tsp ground mustard
Salt & pepper, to taste
