Strawberry Lemonade Bars

These Strawberry Lemonade Bars are perfect combination of sweet and tart.
Light, delicious, refreshing and so easy to make! Perfect for any time of the year, but instantly remind of spring, summer and sunny weather.
They can become one of your new favorite desserts during spring and summer months when strawberries and lemons are in season. They have delicious shortbread crust topped with sweet and tart strawberry lemon filling which is giving the bars soft but dense texture and sprinkle of
powdered sugar on top gives them sweet layer and attractive look. They taste great and look pretty enough to serve at a special event, brunch or summer parties. They are always a hit!

What Ingredients You Need For Strawberry Lemonade Bars

To make these bars, you really don’t need a lot of ingredients. Most of what you have will already be in your pantry — which makes this one of my favorite kind of desserts to make.

Sugar
Butter, room temperature
All-purpose flour
Salt
Fresh lemon juice
Lemon zest
Strawberry puree
Eggs
Baking powder

How To Make The Crust

Preheat the oven to 350F.  Grease or line a 9×13 pan with parchment paper.
To make the crust mixture beat sugar and butter in a medium bowl until light and fluffy.  Gradually add flour and salt and continue beating until the mixture is crumbly. Then pour into prepared pan and spread in an even layer.

Bake for 17 minutes or until lightly golden around the edges. Meanwhile make the filling.

How To Make The Filling

For the filling, in a blender or a bowl add the lemon juice, lemon zest, strawberry puree, eggs and sugar. Blend until smooth. Add flour, baking powder and salt and blend for another 15 sec or until smooth.

Pour over the hot crust when it’s finished baking, return to oven and bake for additional 23-26 minutes or until the top looks dry and is slightly golden. Let it cool
completely then slice and sprinkle with powdered sugar using the sifter. For clean cut use damp knife and clean your knife in between cuts with wet paper towel.

Tips

Make sure the butter and eggs are at room temperature before use.
Dust with powdered sugar using the sifter when completely cooled, if you dust while warm the sugar will melt away.
Use a damp knife to get a clean cut. Clean your knife in between cuts with wet paper towel.
Store leftovers in a refrigerator.

Ingredients
  

Crust

  • 1/4 cup sugar
  • 1/2 cup butter room temperature
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt

Filling

  • 1 cup fresh lemon juice
  • 2-3 tsp lemon zest
  • 1/2 cup pureed strawberries about 3/4 cup berries
  • 1 1/4 cups sugar
  • 4 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions
