I have a little confession to make….. I got kinda hooked on these this weekend. These are so easy to make, just slice them into sticks, bread and bake. Crispy, tender, salty and flavorful they taste just like fried zucchini, only so much healthier.

Roasted Cherry Tomatoes with Garlic
We have an over abundance of cherry tomatoes in our garden. I’m not complaining. No way. I never plant this recipe but it turned so good and simple. I made this on Sunday and it didn’t last 24 hours in our house.
They were perfect last night, creamy and slightly caramelized, but I’d say they were equal or much better in the morning, because, I really, really enjoyed eating them for breakfast, very simply arranged on some toast, drizzled with a little olive oil and sprinkled with parsley.
Easy Cheesy Garlic Breadsticks
Well, I’m going to try to convince you that you need to make Cheesy Garlic Breadsticks right now. Who doesn’t love cheese and bread? They just go together so well. And what is even better than just cheese and bread? Warm bread with garlic and cheese melted on top. I know I don’t need to tell you just how absolutely simple the entire process is, because it takes only 10 minutes to prepare, plus You CAN USE JUST ABOUT ANY PIZZA DOUGH(your favorite homemade or store bought).
Cheesy Cauliflower Tater Tots Recipe
I saw ideas for cauliflower tots that looked tasty from several other great food bloggers, some of them had an ingredient and/or method which I didn’t want to use, so I started experimenting to come up with my own version. I decided to make few tweaks, cooking the cauliflower in microwave before chopped it in the food processor, and drain the chopped cauliflower to keep the tots as crisp as i could get them. The mixture of the shredded cauliflower with some cornmeal gives it the perfect tot texture.
Phyllo Wrapped Asparagus with Parmesan
Fancy-looking and festive, these crispy spears will make a veggie lover out of anyone. Even someone who avoids vegetables will like asparagus if it is wrapped in phyllo pastry dough, this flaky pastry is a wonderful thing, it makes the asparagus easy to pick up and eat with your fingers. If you’re not familiar, it’s basically paper thin sheets of unleavened flour dough. A bit time consuming, but it’s worth it in the end.
